Well, at the end Hudson's daugther decides not to marry Dean's character (Rick if I recall correctly) because she realizes he's just a man obsessed with destroying her father and hence her family. The whole family make peace with one another and decide to return home, to Texas.
The very final scene is Hudson getting into a fight with a dinner's owner who refuses to serve to a mexican couple. The fight is intended to show he's past his racial prejudices and has finally accepted his son's mexican wife.
I hope this short description hasn't opened more questions than the answers given :)

I'm a mixture of Albert Einstein and Arnold Schwarzenegger. The only trouble is that I got Einstein's body and Schwarzenegger's brain
