However the win'95 backup just crashes out. It also doesn't warn you if there are files on the disk which can be deleted, it just crashes.

If you're dealing with business data, you need to take the belt and suspenders approach. I have three nt servers at home, plus my development machine. I have a 1 gig Jaz drive and a 7 gig ditto max. I copy current projects from my workstation to one of the NT servers, then run a tape backup also. It then goes into a fireproof safe. What would happen if you had a fire and you had backed up to another disk, to tape and even to a jaz drive and the fire got all of them. You might even want to look at getting an off site location just for that, or purchase a fire proof safe.
