http://audacity.sourceforge.net - it's a freebie audio thingie, and for some reasons also can't produce mp3 directly, but with it uses the classic command-line lame_enc.dll encoder, which is actually zipped together with it. I use it as a de-popper or just as a recorder - I've once recorded almost half an hour of conversation with it, and saved the file as mp3, no problem.
