Apart from the default gateway, static routes, which are a different concept, can also be set. A static route basically says: "To reach network a.b.c., send the information to the device at IP address x.y.z."
Since a computer often communicates over a router or proxy (or another, single conection to the outside world), static routes aren't often used at the level of individual computers. On a router for example, configuration of routes (either static or dynamic) are much more important.
