Basically you have standarized queries that you create as Stored Procedures. Things like "Select a customer by customer number", "Select a customer by phone number", or "Get a list of customers with the last name of Smith".

Ad-hoc queries are things that you can't anticipate and code for ahead of time. Something like "Get a list of all customers, with a last name of Smith, that live in Podunk, California, and have total sales between $2,000 and $10,000."
