For two reasons in this case. The goal was to slowly turn the application into a back/white application (dim down). This is what happens when you choose to shut down windows, but don't immediately decide wether to stand-by, turn off or restart. One reason is that there are finally only 256 colors in use (everything between white and black.) Secondly, it's much easier to achieve the effect by slowing reducing saturation in an HSL color than to slowly transform any RGB color into the matching gray color with all the colors between.
