I would reccomend updating the progress bar relatively often so the user knows something is happening. If the process is not a loop that does the same thing X number of times (but instead one big process) then I would update the progress bar on key places in the process. In my oppinion it is also better that the last couple of interval take a shorter amount of time (it just makes the user happier), instead of the last 10% of the progress bar takes about 50% of the total process time (some installs drive me nuts when they do that).
