Hi Joel,
I don't know how to select only portion of PDF document,
but by pressing CTRL+A folowed by CTRL-C select & copy ALL text from pdf file into clippboard buffer. You can paste it then into temporary txt file.
From there, you can chop chunks as u wish.

This is of course manual operation, so folowing Sergey's link
might be better direction if you are trying to automate this process.
