I worked on a project something like this a couple of years ago. All document creation was done through a VFP app, which used Automation to open the relevant Office app and create or open the document. To prevent users from opening the documents outside the VFP app, we did some sleight of hand, storing the document with mysterious names in mysterious folders. That part was handled by add-ins for the Office apps that called back to a VFP DLL.

Haven't worked with InfoPath (which didn't exist then).
