If you have that many tables, they are big and/or you have many concurrent users, it is recommended to upsize to a big DB like Sql Server or Oracle anyway. Not being a big DB pro myself, i can only tell you i've read both DB's have backup procedures included right out-of-the box.
As for the backup process, i have customers with over 50 VFP tables, more or less 50 concurrent users, and i have two utilities that backup this stuff: one is CRON ( over Novell ) that backs up the whole directory from one server to another every hour, and the other is a small script that does the same stuff daily in the manager's workstation. Never had a problem with those, even if all tables are used all the time.
