There are lots of indications that evolution does, indeed, occur. Fossil records from the far past show us creatures, quite different from those that exist today.

Also, certain radiations are known to create mutations.

Evolution is used to explain long-term processes, but in fact, it can be observed on a daily basis. For example, after a new antibiotic was discovered, a few years ago, it took bacteria barely a year to catch up and evolve resistance.

Also, evolution theory has no serious competitor - there is simply no way to explain how life came about, except by assuming that it evolved from simpler life forms. For example, it has never been observed that an elephant (for example) springs to life out of nothing. It seems we creatures are just too complicated for that.
