PA enjoys an Omish community, right? I have heard of "shakers" too - they make light, yet solid furniture. Are there still "Shaker" communities?

Do Omish farm without nitrogen (manufactured) fertilizers? Do they allow some fields to fallow for a season or two?

I was reading a report a few days back that asserted most of our natural gas was consumed to manufacture fertilizer. I was just courious, if you know, what kinds of yields the Omish get without industrial nitrogen.
