It works fine on XP and a decent video card. I use nVidia that comes with excellent video management software for Windows, very useful but not a must.

I only use VFP & two monitors for development. I open a form under construction and properties on one. I have code windows (methods) in the other. I also use the other for displaying tables, debugger, object browser, task pane.

I have never created wide forms for production code as my users do not have two monitors but you can certainly do it. If you make wide forms they will have a break in between monitors that looks ugly. You would have to position controls just right to look good (stating the obvious). Of course users can reposition forms at will and you can save their new coordinates and size to restore later in code if you want.
