I use a two monitor setup both at work and at home and I am very happy with it for development, but I don't think too many end-users have multiple monitors (it depends on what type of users you have).
One thing to be aware of is that you can have different resolutions on the monitors and this can cause unexpected results (unless you know about it<s>).
Also Remote Desktop does not support multiple monitors (yet), VNC on the other hand does.

If your users have some serious $$$ I would reccomend buying a huge widescreen monitor and crank the resolution up.
