Because one is a plausible, logical, scientifically observed/observable sequence of events - the other is the scribbling of some mad old men thousands of years ago who 1) couldn't possibly know what went on in the events they described, 2) had no idea of evolution (not having had the benefit of the work of such as Darwin and Mendel) and 3) needed a convenient way to net the masses. Oh, and 4) made a complete mess of their story in their explanation of how the next generation was begotten.
