You could create a registry setting that sets it to demo mode and increment a value in another key every time they run the program - allow for a maximum number of uses instead of by date. When they install a full version change the demo to live and in the future if the value is live then don't check the increment number. Still not foolproof unless you encrypt it so a smart user can't find the key and change it to 0 again. They couldn't reinstall the demo mode because in the install you can check for the prior existence of the demo/live key.
