Sounds like you were turned down for being honest and practical.
I work in a VFP shop for a major mortgage company. We have here a very structured QA and testing procedure.
Anyway, for whatever it worth, next time tell them (your next prospective employer) what SHOULD happen in an idea world where budget and resource are not an issue. Then clarify that nothing is written in stone and that for most companies budget and resource is very much an issue... you know, tell them what they want to hear. :)
