Turkey don't rule with sharia. I could only say which I heard:

In a sharia goverment; anyone can choose any religion or atheism. But if anyone choose islam he/she will rules under sharia laws than. If anyone changes his/her religion after choose islam, he/she will declared a faithless. The penalty is death. Who is want to change his/her religion after than islam he/she must left his/her country.
