Important question. Not surprised to see so many people still developing with 800x600 as the minimum (as I am). Would love to go to 1024x768, but just don't want to fight the battle (and 800x600 hasn't really been too much of a problem). I develop at 1920x1200 on my Dell Inspiron 9300, but would like to go to an even higher res via multiple monitors. Maybe after LCD prices drop a bit more.
