I would create a catagorization of products that allowed multilevel selection. I would also give the user a textbox into which they could type the product ID they wanted (in case they knew I and didn't want to fiddle around with searching). The form would allow the user to select from each level and then populate the next level until the user had chosen the actual product.

If this was a point of sale system I would immediately move to bar coding for the data entry.
