My approach was to remove that field from the DBF in order to not be bound to that restriction. Then, I could have about 1 Gig in each of the FieldMemoX.dbf table which would hold the memo field values of all the records of Table.dbf.

Interesting approach. To avoid any more tinkering in the coming years I'ld set it up as at least 15 memo tables from the start, since then the first file forcing a change because of the 2 Gig barrier probably will be the .dbf and you have a few years without ANY changes for similar reasons.
