I'm afraid I don't know how iTunes does its thing. My daughter has a Napster subscription and it does the relatively disk unfriendly thing of dumping everything to the \My Music\ folder. It doesn't pull album art at all.

WMP makes a web hit to pull the album info (track listing, artist, composer) which are tied up in a WMP datastore I found an add-on that will pull the data out to an xml file, but it didn't get the info I really wanted out of it. The art gets put into a jpg file named with the album GUID. Some of the albums I've got are obscure enough that there was no data in the WMP source so I've searched out artis discography websites or snagged images from amazon or other online retailer. A few albums I've had to just scan the cover myself and resize it.
