FWIW, supermarket sliced meats aren't so good either. In a large Meyer's 3 weeks ago I determined that *all* the deli meat was pressed with gelatin and preservative. Placing it attractively with parsley on a stainless steel tray with servings by an aproned attendant, was purely marketing.
