Mozilla Thunderbird (http://www.mozilla.com/thunderbird/) has a Bayesian filter right out of the box, though I think you need to turn it on. It learns, and it's only about 4-5 messages a day that I have to junk myself. And I still haven't caught it with a false positive (i.e. a real message marked as junk). It even distinguishes between ordinary spam and phishing scams. And it doesn't have any of Outlook's security vulnerabilities (unless you count the user's ability to run an attached .exe file :). IOW, last time I got a virus via email was ages ago... before Thunderbird.
