Can fresh (not frozen) French fries be made 'crispy'

My mom would make French fries using an iron frying pan, and place it in the oven at about 425 degrees (F), without a cover. After a few minutes you turn the fries. The fries were chrisp and tasted good. No oil was used so you had to watch the pan like a Hawk! :)

Who would eat anything from McDonald's? Yuck! :)
