In general, there are two types of solutions:

1. Run monitoring software on each workstation
2. Log and analyze traffic passing through routers etc.

Option 1 gives you total monitoring capability of all user's functions including things like keylogging, e-mail tracking, IM tracking etc. Very Big-Brother-ish, users tend to not like it much.

Option 2: basically tracks requests made by internal users to the wider Internet. Many routers/firewalls can be configured to send log information to a logging computer somewhere on the LAN, which typically runs a daemon like Kiwi Syslog Daemon. You can then analyze the raw log files any way you like.

Option 2 pretty much requires that all computers on the LAN have fixed IP addresses, and that it's basically one user per machine, and that if they move, their IP address moves with them.
