ctrl+shift+escape still works, and taskmanager doesn't show explorer.exe anywhere, once you select to "install" it (i.e. set it as the shell). After the next reboot, it becomes the shell. You can still run explorer as an app, it still opens when you press win+e, you can even show the original desktop if you like (though it vanishes soon - don't remember when, probably rightclick).

Some other win+key combinations give you somewhat different responses now, and AFAIK that's configurable too.
