I saw one once where it was an 11x17 page folded in half, so there were 4 full sides to work with. I thought it was pretty neat, but would that be too much?

I think the two page resume works best. Not too long, not too short. Add a 1 page cover letter which addresses how you meet the particular qualification of the posting or position that you are applying for. This saves them time trying to extract (and possibly miss) stuff from your resume.
