A bit of trivia: There are 4200 varieties of potatoes in Peru. Imagine the possibilities! :)

>>>Up North, in the chippies, we used to get things called "scallops". Unfortunately they weren't shellfish but mashed potato discs, coated in batter (as everything! :-) and deep-fired. I loved them. But you can't get them downs South here.

>>>
>>>Not a bit starchy to taste?
>>
>>The apple gives it a nice flavor and yet you can taste the potato ever so slightly, which I enjoy.
>>
>>I have had a few potato dishes mainly based upon Irish, Polish, and German dishes. These include dumplings, pancakes, soups, and salads. My wife being from Peru introduced me to Peruvian dishes such as Papa Rellena, Papa Huancaína , and Causa. There are lots of things you can do with potatoes that are delicious.

>>If all else fails - invent your own dish! Now what do I have in the kitchen? :)
