Mexican and Tex-Mex is on my top 4 list of favorite food.
In the early 90's I lived down in the Texas valley near McAllen, TX, just a spit'n distance from the Texas/Mexican border.

Down there it all Mexican. The food was fantastic. That's where I first tasted the green chili. They put it on everything. Enchilada, chicken, tacos, stew. And the Chili con carne, it's not green but boy is it good. Muy Delicioso!
