Greece isn't bad since they eat a lot of cereals and vegetables. But you're right they are puzzled that you would want to eat a series of side dishes instead of the main course.
Italy suprized me that pasta wasn't a main dish, but the dish before the main (meat) course.
Eastern Europe is the worst for a vegetarian. Rarely any vegetables, those that exist are boiled until all nutrients are gone.
