Another thing to do is study the UI in other products. What works and what doesn't? Look carefully at the Office UI. While not the best nor most productive, it is
familiar to most people, therefore making them more comfortable with the UI in your applications...and requiring less training.
Look at the Vista and Office 2007 UI. They're both quite different than what we're used to, but more and more applications will start to mimic them.
