I haven't used Vista but I'd like to think important stuff like that remains (mostly) the same as it was in XP and earlier back to NT. From a CMD (or equivalent) window:
NET USE T: \\ServerName\SharedFolderName /persistent:y
In the XP Windows Explorer you can do it as follows:
- expand My Network Places down to Microsoft Windows Network, then expand until you can see the server, then the share you want
- right-click on the share, click on "Map network drive" and fill in the dialog

Hopefully the Vista equivalent of Windows Explorer offers something similar.

I'd be interested to know if either of these methods are significantly different in Vista.
