There's a really good place here in Los Angeles called the Wine House. I've taken several classes there that were of great quality. They also have a day dedicated to a type of wine, Chardonnay, I think Zinfidels, and Champagne.
You get a bunch of tickets with several labeled for just the expensive varieties. The last time I went to one of these, I didn't find a single wine that required a labeled ticket that I liked. So I asked around. The only answer I could find that made sense was that the more expensive wines were aged in expensive oak caskets.
Personally, too much oak tasted awful.
