I agree. Here, on Shrove Tuesday, families traditionally make pancakes, but thin ones, sprinkled with sugar and a squeeze of lemon. For some reason, people will wait ALL YEAR to make pancakes like this. Beats the hell out of me.

I'd imagine they don't have too many maple trees in the CH. I don't think there are any in the UK (except in the grounds of stately homes). I don't think we have the night/day temp. gradients either for the sap pressure. I don't think sycamores produce a decent sap either.
