I understand exactly where you are coming from. Keep in mind that the TasTraders sample application was created to show programmers as many of VFPs features as possible. It is not really a great business application. I went through these same growing pains last year... What am I saying, I am still going through them :-) Anyway, the best way to learn is to try. However, it also helps to look at other developer's applications because on your own you never know if what you're doing is really the best way. I bought a book called Programming Visual FoxPro 3.0 by Wil Hentzen last year. I still refer back to it. There are tons of examples and he really explains every step in detail. He walks you through creating an entire application and leaves you with a frame work (classes) for building future applications. In the past year I have expanded on his base classes and in some areas I have replaced them with my own designs. There are tons of books out there. I'm sure some are better than the one I picked, but this one really turned the lights on for me and got me started. Remember that you don't have to make the move to OOP over night. Start by using it for forms and controls, since you really have no choice. Then start converting the routines in your procedure file over and creating custom classes. I think it's to much to grasp at once.
