I'm not sure what do you mean with "if you disconnect from the data". The entity framework works disconnected all the time. There is no persistent connection at all. An entity can keep shadow track of what's changed. What I didn't see is any mechanism -by now- to automatically build the update/insert operation so that only changed fields get sent.

Maybe I got something lost in the long thread. If you tell me what is what you saw, maybe we can go deeper in the issue together. I'm working with that anyway, so it is not a problem for me to check anything.
