Word will default the sentence you are writing - or the one you just wrote - to the language it detects most similarity with. Thus, pressumably, if the text has an "ñ", it is more likely to be detected as Spanish than as English. I guess it will also check for combinations of letters ("sch" might indicate German).

I think you can select what languages are analyzed, with a program outside of Microsoft Word. Check in Windows "Start" button, Programs, Microsoft Office, and look for a program called "Tools | Language configuration". It seems this requires the installation CD.
