Something I was taught very early on in my career was to never say "that will be easy", or "won't take any time at all", etc. Instead, I always told them that I would do some research and get back with them.
To this day I do the same thing - everyone always wants it yesterday and they think we can perform miracles. One of my boss' favorite things to say that I use quite often is "it takes 9 months to birth a baby no matter how many people are involved".
