I have a program that will copy files and folders like this (skipping files in use and making a log) and retain directory structures, though if you wanted to get it in one folder you could create a main folder and copy everything into that (folder structures would be retained, but they'd be under that main folder). I just kick it off each night manually and it copies data up to the server, where changed files are backed up to a Zip file (this is done by a different program, but both are VFP programs). It's the program that runs on the server that does the zipping (I don't bother with encryption). So that part is in a separate program.
