I don't know much about the affairs of that region, but I'll give it a go.
I think the UN wants it because it's the best chance for "peace". You can't very well expect Albanian majority, which is mostly Muslim, and the Serbian minority, mostly Orthodox Christian, to live in peace for very long... I wouldn't think so anyway. Serbs probably would be against it because they see Kosovo as their ancient home land (for lack of better description) but "peace" trumps everything right, in the short term. And remember, US is not against Muslims. As long as they can live in peace I wouldn't think they care what they are.

This is just a hunch from a layman so don't be upset if you think I'm way off. :)
