First, you must omit the quotation marks:
? vartype(mytable.myfield)
? vartype(mytable.myfield = "U"
Once you do this, it works only if the field exists. I think you must use type() in this case.
It does work for variables.
In summary, I am not sure whether this should be considered a bug.
