I suspect that this isn't mostly about single motherhood, though, but about French couples living together without marriage.

I have a cousin who was together with a French man for many years. They had two kids together. She chose not to marry him because, she said, if they split, under French law, he'd have custody in that case. I don't know if that's because she's American or if that's the general policy in France.
