If a new field is added to the table, it could slow down unecessary the query as more data is transfered and this extra data may not be needed in some places. On the worst scenario, it could crash the application if the new field is not added at the end (like if you binded a grid on the result of the SELECT *).

Good point. I think I also prefer to specify all fields in my select statements.
If it's not broken, fix it until it is.
