You can use any controls you want (to a certain extent). The best way I have found, is trial and error. For example a combobox doe not work well (specially if the user will fingers rather than a wand). Grids either you can't do much, since you cannot increase the size of the scrollbar. Spinners also tough.
The best keyboard I have found (very configuable also) is Click-N-Type. You can find it here http://www.freedownloadmanager.org/downloads/keyboard_touch_screen_software/
As for a calculator you can make it yourself. Just make all controls big, specially if fingers are being used.
