Paris CDG is quite easy and quick to get to on the RER. Thats the local French trains that are integrated into the metro.
>Great idea. I was wondering if it would be doable to fly into Edinburgh and out of Paris. I'll be checking with a travel agent on those rates. It just seemed like a better plan to start in the north and finish in the south, and not have to make a return drive.

You have the advantage of no ridiculous airline check in times and plus you depart from central London and arrive at the Gar du Nord in the middle Paris. So no time wasted travelling from an airport to the bits of the city you want to visit. (Hey I can feel a trip to paris coming on !)
