There are tools that are very comprehensive and can record literally everything that goes on within a user's session e.g. http://www.spectorsoft.com/ It might be possible to have this software only "turned on" while you're using the computer (i.e. not the regular user(s)).

I agree however that setting up a limited account is probably a better way to go.
