Just a couple of thoughts..
We sell, support, and develop add-ons for Microsoft Retail Management System (a POS among other things). Our customers almost without exception do not use a mouse for POS operation. I also deal with several warehouse operations applications where a mouse is not connected at all.
Screens need to be set with very careful taborder and menus - let the users determine these!! Tune them to their exact procedures, not the other way around. Want to see POS applications that fail? Those are the ones where a programmer decided the 'logical' screens and program flow
Another option is to use touch screens, which are fairly inexpensive and in general give users faster 'point and click' operation than a mouse. No extra programming is necessary. Most of our fast paced retail customers are using touch screens. They love them.
