Gerard,
Off the top of my head, there should be a selection to use a datalink file (or UDL). Create a .udl file and use VFPOLEDB driver. To create it:

-Right click on desktop, add new text file
-Rename to myVFPLink.udl (a dialog would pop up, yes sir I am sure change extension).
-File's icon would change
-DblClick and continue choosing 'OleDb driver for VFP'
-Point that file from within Excel

PS: You asked how to do it manually, right? Otherwise it is easier with automation code.
