Every time I access the individual pages that use these masters it shows up as "Untitled Page". I just went and changed every page individually to have the Title I want. Next time I publish it should be fixed, but it isn't working the way I expected.

If you mean that the content page has something like:

< %@ Page Title="Untitled Page" Language=

Then yes, Title defined here overrides the master page. Set it to an empty string or remove it.
